Healthy(ish) Cake Pops | Recipe

As you know, it’s my mums baby shower tomorrow and I have set myself the task of baking cake pops for everyone even though I have never made them before. So this week I made a few to test out a recipe. 

After scanning many cook books, and of course some serious Googling, I failed to find a healthy cake pop recipe so I made up my own!

Ingredients
1/2 Cup Coconut Flour
1/2 tsp Baking Powder
1/4 tsp Fine Sea Salt
4 Large Eggs
1/2 Cup Agave Nectar
2 tbsp milk (I prefer almond milk)
2 tsp Vanilla Extract
1/3 Cup Coconut Oil
1 Pack Candy Melts
Sprinkles – I use 100s and 1000s

Preheat oven to 180°C.

Step 1
In a large bowl mix together all the dry ingredients – coconut flour, baking powder and salt.

Step 2
Melt the coconut oil in the oven for a minute or two.

Step 3
Now add the wet ingredients – 4 large eggs, agave nectar, milk and vanilla extract. Give it a stir and add the coconut oil. Whisk all the ingredients together until there are no lumps.


Step 4
Spoon the mixture into each of the cake pop holes in the cake pop mould. Put the cake pop mould onto a tray so that when you take them out the oven they don’t fall out!


Step 5
Put the lid on and place in the oven and bake for 18-22 minutes. Mine needed about 22 minutes.

Step 6
Cool either on a cooling tray or in the fridge for about 10-15 minutes.



Step 7
Melt the candy melts as instructions state on the pack. When melted, dip the cake pop stick into the candy melts and stick them through the cake pops about half way.

Step 8
When set, dunk them straight into the candy melts until fully submerged. Mine was quite thick so I needed to add a couple of drops of vegetable oil to thin it.

Step 9
Tap on the side of the bowl to remove any excess. 



Step 10
Before the candy melts set on the cake pop, sprinkle over any toppings of your choice.




Step 11
Bite that cake pop! Delicious, aren’t they?
